Banana Bread Anyone?

I always enjoy cooking. Lately, I decided to learn how to bake a cake. I ask myself "what is the easiest cake to bake on earth?" The answer is plain and simple - Banana Bread! (Yes it is a cake.)  Banana Bread is a popular recipe in Canadian household, mostly due to its taste and simplicity. After all, who does not like bananas? Basically anyone is able to make this on their own without prior cooking experience.

Below is my version of Banana Bread.
 
  • 1/2 cup salted margarine
  • 2/3 cup sugar
  • 2 vanilla beans
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups mashed ripe bananas (about 3 medium or 2 large bananas)
  • 2 large eggs
  • 2 1/4 cups All-purpose flour
  • 1/2 cup chopped walnuts 
  • 1 cup milk

I tweak the recipe a little to make it my own and to my surprise it turns out great!

Directions:

1) Preheat the oven to 325F and lightly grease the baking loaf pan with margarine.

2) In a large bowl, mixed all the dry ingredients until smooth.

3) Add all the wet ingredients and stir until smooth.

4) Spoon the mixture into the loaf pan and let it stand for approximately 10 minutes.

5) Bake the bread for 45 minutes, then use a toothpick to check the center of the bread. When it comes out clean, gently lay a piece of parchment paper on top of the bread to prevent the top to burn.

6) Bake for additional 20 to 25 minutes and allow the bread to cool off for at least 10 minutes.

7) Enjoy the perfect Banana Bread!
