Kheer Anyone?


One of my favourite East Indian dessert of all time is ‘Kheer’ also known as rice pudding. Kheer is usually served at temples during lunch and dinner time, and also served at special occasions at someone’s house. Kheer is kind of thick, sweet dessert that is served to everyone of all ages and dinners, or at the temple. So here is a really quick and easy recipe to make yourself some delicious Kheer.

 This recipe serves 4 people and takes about 35 minutes to be ready.

Ingredients:
2 cups of coconut milk
2 cups of regular milk
3 tablespoons of white sugar
½ cup of Basmati rice, or any other white rice
¼ cup raisins (optional)
½ teaspoon ground cardamom
½ teaspoon of rose water (optional)
¼ cup sliced almonds (have them roasted)
¼ cup of chopped pistachio nuts

I do not like raisins or pistachio nuts in my Kheer so therefore I do not add them, but if you like them then go right ahead and add some in!

Preparations:
-          first thing to do is add coconut milk, regular milk and sugar into a large saucepan and bring it to a boil
-          add the rice and then let it simmer on low heat until the rice becomes tender and  you start to see the mixture become thicker
-          now you can stir in raisins, cardamom and rose water and cook it for a couple of more minutes
-          finally pour the Kheer into a bowl and dress the top with almonds and pistachios

Before you start to eat it, make sure it is not to hot. Let it cool for a couple of minutes.
